Kombucha - Continuous Process


6 lit filtered H2O
2 cups sugar

6 tea satchets (if strong tea, use 5 satchets)
300 ml kombucha starter liquid including some SCOBY (Symbiotic Culture Of Bacteria and Yeast).

Method:
Boil water & sugar. Turn off heat then add tea bags to brew whilst remaining covered for 30 mins. Wait till the temperature reduces to tropical room temperature (30°C / 90°F). Add kombucha and ferment from 7 - 10 days, depending on SCOBY and starter strength. It's now ready, but the tanginess taste increases the longer you let it ferment.


Tip:
After repeated fermentation, as the Kombucha SCOBY increases in size, the fermentation duration could be reduced to as low as 3 days, especially when done in a continuous-fermentation-container type.


Reminder:
  1. Fermentation should be at room temperature in a glass container and the top covered with cloth to allow breathing. It is afterall a living organism and will be your lifelong pet as long as you maintain it regularly  (ie. when you've drank it to its minimum quantity) by literally feeding it with its food, which is tea, sugar and kept in a clean area where it won't be contaminated with other stuff. In return, when it has matured enough, it'll provide you with a healthy drink daily.

  1. After drinking, you may want to rinse your mouth with water, but if at all you wish to brush your teeth, give yourself at least 30 minutes before brushing, since like vinegar, it is quite acidic and may erode the enamel of your teeth (yes, my dentist agrees). But unlike vinegar, it contains various healthy probiotics.

Option:
You may want to decant into an airtight container like a fliptop bottle and ferment an additional 7 to 10 days longer for a 2nd fermentation or according to your own taste of tanginess. Other fruit flavors could be added during this 2nd fermentation. Keeping it at room temperature will increase its effervescence of CO2 pressure build-up, so be careful when opening its top. To reduce this build-up, store it in the fridge where it'll remain in suspended animation for longer periods.
